You have characters who flip between being male and female, why not have a character who changes race between the arcs?

The problem with that is that all the major characters have already been premiered. Doing as you suggest now (either with a character who's never appeared, or retroactively to a major character) would be obvious tokenism. I'm not sure what the solution is to the world's race issue, but I'm pretty sure it's not a token black Round Table knight in a comic (all due respect to Mike W. Barr).

You could do a blaxploitation arc, where all of the characters are black. I'd love to see the AKOTAS take on Shaft.

Which is not a bad idea (though perhaps for the parody arc rather than one of its own) ... except for the dealbreaker that it's a genre I'm wholly unfamiliar with.
